Help: Crewing For A Ultra Distance Run For Beginners

So my wife, myself and a couple of friends were scheduled to do a 50km Ultra next weekend (I was going barefoot), and unfortunately it was postponed due to the course being under water due to flood conditions. Anyway we decided that we were still going to go out and run the 50 km anyway in a different location, with my wife and I scouting out a trail on Saturday for our friends to run on Sunday. The idea was my wife and I were going to crew (and alternately pace) for them by setting up drink and food stops along the extent of the run, to allow them to experience this.

As we have participated in one ultra last year, we have an idea how to pull it off, but I would like to get any advise from anybody who has been involved in this before. We are figuring this would be good for training to ensure our scheduled ultras later in the year are a positive experience. Any and all thoughts and advise are welcome.
