Who likes it Hot?

Any chili pepper lovers here? Like to sweat when you eat? Love hot sauces, but they have to taste good. Some of my faves are: Jolokia Ghost by Aubrey D, Scorned Woman, and Frank's Extra Hot, with a spoon full of Jolokia Ghost mixed in. My friend at work grows a myriad of hot peppers and I always get a few sandwich bags full in the fall. Great stuff! Anyone else?
 
I can't say I would try to eat a spoonful of ghost peppers by themselves, but I do like hot stuff.

I have two quarts of ground habaneros from my garden with a few ghost peppers ageing in my basement right now. There probably more then ready to thin out with some good vinegar by now. All in all I'll probably have close to a gallon of hot sauce when I am done. I'll probably mix some with some good dried chipotles, some with garlic and some just as it is.

Last year I made a batch with cayenne and habaneros and by time I ran out wish I had made it hotter.

If you have a good recipe send it my way please! I don't go over the top hot like many do, but I enjoy a little heat plus some of the flavors if different types of pepper. I didn't have a garden this year but last year I think I had about a dozen different types of peppers (and multiple plants of most). I've dried habaneros once and they turned out well. My home grown ones seemed so much hotter than ones I had got from the store, and more flavorful too!

But my favorites to make from the garden is salsa and pickled banana peps. I usually make salsa with several types of peppers mixed, and can a few dozen jars. For my pickled banana peps I mix in a lot of spices and couple slices of habanero into the jars to add some extra heat. I'll slice them into jar length strips for samies and rings for home made pizzas. Never tried making hot sauce yet though. I have a smoked chipotle hot sauce that I really enjoy and doubt I could replicate. I've given thought to trying to roast peppers first though, and I do have a smoker, so maybe I'll try someday. Its a lot of extra work though to an already lengthy and tedious process. But I do enjoy it a lot.

Tristan - my recipe for Chicken and Dried Chillies is simply cut and fry some onions, add cut pieces of chicken and then a handful of dried chillies (the purple coloured ones) to taste. I always put too many chillies in. Means more for me :)

EDIT: Forgot to say to serve with lots of boiled rice ;)

if you're not roasting your veggies you're really missing out. having an outside smoker saves everyone's lungs in the house too. i once choked out my neighbors walking by my place when i roasted my chiles in the oven.
